Fresh Greens with Vinaigrette Dressing

A simple salad is completely dependent on the freshness of the ingredients. Choose your favorite spring blend, spinach or lettuce from your local market. Look for vibrant colors and greens that aren't wilting. For the vinaigrette, use the recipe below as your base for almost any salad dressing flavor.


Fresh greens
2 Tablespoons red wine vinegar
6 Tablespoons olive oil

Tools you need

Mason jar or some other small container with a seal
Measuring spoons
Salad bowl



Recipe Directions

Put the oil, vinegar and small dash of salt and pepper into your jar and seal it. Shake vigorously. Dribble the dressing over the top of your greens and mix the greens to coat them with dressing.

This vinaigrette is your base for a variety of flavors. Do you like citrus? Try adding a 2 teaspoons of lemon juice before shaking. Do you prefer a sweeter dressing? Add 2 teaspoons of agave or honey.
