Tortilla Soup


  • Abbio Stock Pot 
  • Measuring cups / spoons 
  • Cutting board
  • Chef's knife 


    • Dice onion
    • Mince garlic
    • Mince jalapeno (and remove seeds if desired) 
    • Juice 1 lime, and quarter more for serving 


    • Add 1 tablespoon of olive oil to Abbio Stock pot.
    • Bring to medium heat and dd the onions and cook, stirring frequently, until translucent, about 5 minutes.
    • Add the garlic and jalapeño and cook, stirring, for one minute. Add the shredded jackfruit and continue to cook, stirring frequently, for 5 minutes.
    • Add the tomatoes and broth and bring to simmer.
    • Add corn, lime juice, remaining spices, and protein of your choice.
    • Simmer for 15 minutes, tasting and adding salt and pepper to taste.
    • Serve soup with lime wedge, tortilla strips, and cilantro.
